This is a super easy and cheap way to cook chicken pieces. The paprika mixture has a very tasty flavour and produces crisp and golden skin not unlike that of a certain high street takeaway outlet.
Mix together the flour, paprika, salt and sugar in a small bowl.
Put the butter and oil in a large baking dish and heat over a low heat until the butter is melted. Turn off the heat.
Rinse the chicken pieces in cold water and dry thoroughly on kitchen paper. Remove any excess, overhanging skin with scissors or a knife.
Put the chicken in the oil and butter mixture and turn to coat.
Put the chicken skin side up. Place 1/3 of the flour and paprika mixture into a sieve and dredge over the chicken, then turn the chicken and dredge another 1/3 over the pieces.
Bake at 200°C (190°C fan) for 20 minutes then turn the pieces over, sieve the remaining 1/3 of the spice mixture over the pieces and return to the oven to cook for another 20 minutes.
Remove from the oven and put the chicken pieces on some kitchen roll to absorb any excess fat.
