Ingredients

4 Cups (500g) Fresh or Frozen Peas
1/2 Red Onion
100g Feta Cheese
A small bunch (approx 7g) Fresh Mint
1/2 Lemon
1 Tablespoon (15ml) Olive Oil

This is a lovely fresh salad that can be made in advance as it won’t wilt.

  1. Place the peas in a saucepan and pour over just enough boiling water to cover them.
  2. Bring the peas up to the boil, turn it down so just simmering and place a lid on top.
  3. Simmer for 2 minutes.
  4. Drain the peas and plunge them into a bowl of iced water. This will immediately stop the cooking process and the peas will retain their vibrant green colour until you want them.
  5. Finely chop the red onion, crumble the feta cheese and chop the mint leaves.
  6. Drain the peas and put them into the serving dish with the chopped onion, feta cheese and mint.  Squeeze over the lemon and drizzle over the olive oil, toss to combine.
