Ingredients

A bunch of fresh Asparagus
1/2 Tablespoon (7.5ml) Olive Oil or Canola/Rapeseed Oil
Sea Salt and Freshly Milled Pepper
(Optional toppings) Freshly Grated Parmesan Cheese, Finely Chopped Parsley)
  1.  Preheat the oven to 200°C  or 190°C Fan.
  2. Remove the woody ends of your asparagus either by cutting them off or snapping with your hands.
  3. Arrange the spears in a roasting dish or on a baking sheet in a single layer. Drizzle over a little olive oil or rapeseed/canola oil.
  4. Roast the spears for 10-14 minutes (thinner spears will cook more quickly than thicker ones so check after 10 minutes), giving the tin a shake once or twice during the cooking to turn the asparagus and make sure it is evenly cooked.
  5. The roast asparagus spears are delicious unadorned but also lovely with freshly grated parmesan cheese and finely chopped parsley scattered on top.  They are also lovely with roast tomatoes and poached eggs as a breakfast treat.  You can also use the roast asparagus in our Roast Tomato and Asparagus Salad
