Ingredients

Cake Ingredients
2 1/2 Cups (375g) Plain Flour
2 rounded Teaspoons Baking Powder
2 Teaspoons Mixed Spice
200g Butter chopped into cubes
4 large Cooking Apples (e.g. Bramley or Granny Smith) peeled, cored and chopped into small cubes about 2cm square
1 Cup (150g) Sultanas
1 Cup (175g) Light Brown Sugar
2/3 Cup (160ml) Whole (full fat) Milk
1 Egg lightly beaten
1 Teaspoon Vanilla Extract
Topping Ingredients
2 Tablespoons Honey
1 Tablespoon Granulated Sugar

  1. Preheat the oven to 170°C Fan or 180°C
  2. In a large bowl, mix together the flour, baking powder and mixed spice.
  3. Add the cubed butter and rub it into the flour with your fingertips until it looks a bit like breadcrumbs.
  4. Add the apple, sultanas and brown sugar and mix to combine then pour over the milk and beaten egg and mix thoroughly.
  5. Spoon the mixture into a lined 20cm (8 inch) round cake tin.  (Ideally one with a loose bottom or a springform tin). (Click here for how to line a cake tin).
  6. Cook for 1 hour and then leave it to cool in the tin for 10-15 minutes before removing to a wire rack to cool completely.

For the topping:

  1. Gently heat the honey over a low heat or in the microwave.  Bush the top of the cake with the warm honey and sprinkle over the sugar.
