Peanut Butter Cookies

Ingredients

1 1/2 Cups (220g) Flour
1/2 teaspoon (3g) Baking Soda
125g Softened Butter
1/2 Cup (110) plus 3 Tablespoons (50g) Granulated Sugar
1/2 Cup (110g) Light Brown Soft Sugar
1/2 Cup (110g) Crunchy Peanut Butter
1 Egg
1 teaspoon (5ml) Vanilla Extract

These cookies are so delicious that I have to immediately give half the batch away for fear of sitting and eating them all single-handedly!

  1. Preheat oven to 180°C Fan or 190°C.
  2. Mix the flour and baking soda in a small bowl.
  3. Cream the butter, brown sugar and 1/2 Cup of granulated sugar.  You can do this is either with a mixer with a paddle attachment or in a large bowl with electric beaters.
  4. Add the peanut butter (I find it easiest if I warm it gently in the microwave first for a few seconds) the egg and vanilla extract and continue to mix.
  5. Then add the dry ingredients and mix these in.
  6. Take tablespoons of the mixture and roll them into a ball using your hands. You want a ball roughly the size of a large walnut.
  7. Put the 3 extra tablespoons of sugar in a small bowl.  Roll the balls in the sugar and place on a baking sheet.
  8. Flatten the balls slightly using the prongs of a fork.
  9. Cook for 10-12 minutes and then leave to cool on the tray. They will harden on cooling.
