Parsley, Coriander or Mint and lemon wedges to serve
These are great as a snack with some yoghurt dip or tomato sauce or as a main with couscous or rice.
Mix all of the ingredients (except the oil) in a bowl with a spoon or by hand.
Using slightly damp hands, form the mixture into 6 or 8 evenly sized balls. Flatten each ball and shape it into a more sausage shape. Put a skewer lengthwise through each one and sprinkle a little of the oil over each side of the kofta.
Heat a ridged griddle pan or a frying pan so that it is very hot. Place the koftas on the pan, gently pushing each one down so that it makes contact with the pan. Cook for 4 minutes without moving, then using tongs, gently turn the koftas and cook the opposite side. Cook for a further 3-4 minutes. The koftas should be brown and slightly crunchy on the outside and the meat cooked through.
Sprinkle over some chopped parsley, coriander or mint and serve with a little Greek yoghurt with lemon, salt and paprika.
