Lamb Koftas

Ingredients

400g Lamb Mince
1/2 medium (approx. 70g) Onion finely chopped
1 clove Garlic crushed
1 Tablespoon fresh Thyme Leaves
1 Tablespoon fresh Coriander Leaves chopped finely
Salt and Pepper
Rapeseed (Canola) or Olive Oil to cook the koftas
Parsley, Coriander or Mint and lemon wedges to serve

These are great as a snack with some yoghurt dip or tomato sauce or as a main with couscous or rice.

  1. Mix all of the ingredients (except the oil) in a bowl with a spoon or by hand.
  2. Using slightly damp hands, form the mixture into 6 or 8 evenly sized balls.  Flatten each ball and shape it into a more sausage shape.  Put a skewer lengthwise through each one and sprinkle a little of the oil over each side of the kofta.
  3. Heat a ridged griddle pan or a frying pan so that it is very hot.  Place the koftas on the pan, gently pushing each one down so that it makes contact with the pan.  Cook for 4 minutes without moving, then using tongs, gently turn the koftas and cook the opposite side.  Cook for a further 3-4 minutes.  The koftas should be brown and slightly crunchy on the outside and the meat cooked through.
  4. Sprinkle over some chopped parsley, coriander or mint and serve with a little Greek yoghurt with lemon, salt and paprika.
