Ingredients

2 Tablespoons Butter
1 medium sized Fennel Bulb chopped
1 large Onion chopped
3 Cloves Garlic chopped
400ml Fish Stock or Water
1/4 Cup (60ml) Dry White Wine
2 x 400g Cans of Chopped Tomatoes
350g Baby Potatoes (or you could use large potatoes and chop them into chunks)
750g Cod Cut into chunks
Sea Salt and Black Pepper

  1. Melt the butter in a large saucepan and cook the fennel, onion and garlic over a low heat for 5 minutes or until they are translucent.

  2. Add the fish stock (or water), wine and tinned tomatoes and bring the pot up to the boil.
  3. Add the potatoes and simmer for 5 minutes.

  4. Then add the fish and simmer for a further 5 minutes.

  5. Taste and add sea salt and freshly ground black pepper and some parsley if you want.
