Feta and Cherry Tomato Quiche

Ingredients

1 x 20cm Shortcrust Pastry Shell Either homemade or store bought. See below for a link to a recipe for Shortcrust Pastry
4 large Eggs
1/3 Cup (80ml) Milk I use full fat for this
1/2 Cup (125ml) Double Cream
150g Feta Cheese crumbled
Approximately 20 (200g) Cherry Tomatoes (Ideally on the vine)
A few sprigs (say 5g) of fresh Thyme leaves only
1 Cup (approx. 100g) Parmesan freshly grated

  1. Preheat the oven to 190˚C or 180˚C Fan.
  2. In a medium bowl, whisk the eggs, cream, milk and parmesan cheese together.  pour this into the pre-cooked pastry case.

  3. Brush the cherry tomatoes with a little olive oil and arrange them on the egg mixture in the pastry case.  scatter the crumbled feta and thyme leaves around the tomatoes.
  4. Cook the quiche for 30-40 minutes (check after 25), until the egg mixture is set and the top nicely browned.
