Crushed Potatoes with Red Onion

Ingredients

500g new/salad or General Purpose Potatoes Chopped into 1 1/2 inch pieces or if mini potatoes, either whole or halved. I don't peel the potatoes.
1/2 small Red Onion Chopped finely
1 small Garlic Clove crushed
2 Tablespoons of Fresh Flat Leaf Parsley Chopped
1-2 Tablespoons Olive Oil
Sea Salt and Freshly Milled Pepper

  1. Put the potatoes into a saucepan and cover with cold water.

  2. Bring the pan to the boil and boil for 10 minutes.  Check that the potatoes are cooked by testing with the point of a sharp knife.  If you can push it easily into the centre of the potato then they are done.  (If not, continue cooking for a further couple of minutes).
  3. When cooked, drain the potatoes and put them back into the pan.  Use a fork (or a potato masher) to squash the potatoes down a little to break the skins and crush them.

  4. Drizzle over the oil, scatter in the parsley and onion, give a good sprinkle of sea salt and grind of pepper and them mix everything together.
