Caesar Salad

Ingredients

1-2 heads of Romaine or Cos Lettuce
2 handfuls of Croutons (I usually buy these but you can make them if you prefer)
Shavings of Fresh Parmesan Cheese Put as many as you want. I used approximately 10 for a salad for two people.
1-2 Tablespoons of Caesar Salad Dressing * See the link below for the recipe
Cooked Chicken Breast (Optional)
Marinated Anchovy Fillets (Optional - you can find these in the deli section of some supermarkets)

  1. Tear the lettuce into large bite-sized pieces and put them in a large bowl.  Add the croutons and shave over some parmesan shavings using a vegetable peeler.

  2. Add a Tablespoon of the Caesar dressing and give everything a good mix – I use my hands.  If you feel you want more dressing, add a further Tablespoon of the dressing and mix again.  (Keep adding, a tablespoon at a time until you are happy that it has enough).
  3. Put the salad into a serving dish.

  4. If you want, you can make the salad more substantial by adding chopped cooked chicken breast and/or marinated anchovy fillets.  You could also add cooked prawns or a poached egg.
