Ingredients

Fresh or frozen Peas (Allow 60g or just under 1/2 a cup of peas per person).
Enough Boiling Water to cover the peas
Salt and Pepper (optional)
1/2 teaspoon Butter per person (optional)
  1. Place the peas in a saucepan and pour over just enough boiling water to cover them.
  2. Bring the peas up to the boil, turn it down so just simmering and place a lid on top.
  3. Simmer for 2 minutes.
  4. Drain the peas and then add butter, salt and pepper if you want.
  5. (If you are cooking the peas in advance, drain them and plunge them into a bowl of iced water. This will immediately stop the cooking process and the peas will retain their vibrant green colour until you want them.  To serve, drain and then reheat either in a pot on the stove or in the microwave).
