Banana, Pecan and Maple Muffins

Ingredients

1/2 Cup (125g) Unsalted Butter melted
1 Cup (approximately 3) Very ripe Bananas mashed with a fork
1/2 Cup (70g) Brown Sugar (lightly packed)
1/2 Cup (125ml) plus 3-4 Tablespoons Maple Syrup The extra maple syrup is for the muffin topping
2 Cups (300g) Self Raising Flour
1 Teaspoon Ground Cinnamon
1/2 Teaspoon Ground Nutmeg
1/2 Cup (50g) plus a few extra Pecans finely chopped. Extras are for the muffin topping

  1. Preheat the oven to 170°C Fan or 180°C.
  2. In a large bowl, mix the melted butter and mashed banana.
  3. Add the brown sugar and maple syrup and mix in thoroughly.
  4. Add the flour, spices and chopped nuts and mix gently until just combined.
  5. Spoon into paper muffin cases and sprinkle with the extra chopped pecan nuts.
  6. Bake for 20-30 minutes. Check whether they are done after 20 minutes.  If a skewer comes out clean when inserted in the centre of the muffin they are cooked.  If some of the mixture coats the skewer put them back in the oven for a further 5-10 minutes and retest.
  7. Warm the extra maple syrup in a small pot or in the microwave and brush over the top of the warm muffins as a glaze.
